We just officially finished Day 2 of Phase 1 of the South Beach Diet. I had heard lots of good things about South Beach, and when I finally got around to borrowing the book from my boss last weekend, I was impressed. After my super-skim of the book on Saturday morning, I found that the diet was pretty much about healthy eating, with no craziness really. What sold me is that I recently found out that a friend of mine still follows the diet with her husband, and she is pregnant! 
Considering that Michael has been wanting to lose weight for two or three years now, as my family’s Unofficial (Make that Official) Meal Planner and Cook, I thought it was time to stand behind Michael 100% and put my entire family on the healthy eating track. 
So, “Phase 1” is the first part of the diet. It is two weeks long, and is pretty strict, but not as bad as you might think. We’ve been eating pretty well! Since we have our charcoal grill now, we’ve been feasting on delicious grilled chicken and even homemade hamburgers (no buns:). I made an awesome shrimp scampi dish (no pasta or rice though πŸ™‚ and fresh green beans last night, and we had baked tomatoes with mozzarella, Parmesan, and basil tonight to go with our burgers. 
For lunches and snacks, we’ve been having grilled chicken salads, cheese sticks, hummus with cucumber slices, and turkey rollups with red bell pepper strips and Laughing Cow cheese. And we had enjoyed sugar-free jello for dessert so far, except I’m skipping the jello to stay away from the artificial sweetener. πŸ™‚
In a few weeks, we get to add back virtually everything we have to cut out of our eating right now, but we’ll just eat the healthier choices in them. For example, we’ll have pasta again, but it will always be whole grain pasta. Sounds good to me! 
Because I am pregnant, I am not following this diet to a “t” either. Neither is Gabriel for that matter. For example, you’re not supposed to have any fruit for just the first two weeks, but I am trying to still eat a little fruit right now. I’m trying to be “strict” with myself and super-supportive of my husband while still being down-to-earth about eating healthy (and enough) to take good care of myself and Baby. So far, I feel pretty good about everything. We are eating much more healthfully than we normally do!

    I'm a RN and I'm all about the SBD. South Beach focuses on eating healthy food and changing your lifestyle from such good decisions; but PLEASE PLEASE check with your doctor about doing the South Beach Diet while you're pregnant. I can already tell you that most OBs wouldn't OK it. Instead of trying Phase I, consider doing Phase II for a short time and then working into Phase III.

    Erin, it's so awesome to see you serving your husband and family that way! I need to be more open to what Daniel would like to eat instead of what I want all the time.
    Wyatt isn't walking yet either. Before you know it we will be teaching them to tie their shoes or learning their ABC's so I always say let them be as little for as long as they want to!

    Michael has lost 12 pounds since January, with a lot of that due to when you guys came!!! Now he's already lost a couple of pounds on South Beach. I don't think I've lost any weight so far though, which isn't a desirable goal for me right now anyway. πŸ™‚ I just got inspired and wanted to do something during Lent and beyond to serve my husband and family, and this felt like a great way to do that. We are liking it a lot so far! Ya'll should try it. So far, SB doesn't have any of the, um, "side effects" that we encountered on the No Fruit, No Dairy, No Wheat diet we tried with you guys…:)

    Ugh, we miss the little man like crazy!!!! He's walking better now, can't wait to see him in person! And where was this South Beach last month…. hmm…
